Adam and I won the OVC VIP package this past week! We got:

We had a great time over the weekend with our free package. We got to watch the Lady Gov’s pull an upset and win the OVC! Congrats to them. They are on their way to the big dance!

The men were not so happy because they lost in the last game of the tournament against Morehead 67-65.  I am not very disappointed though because they played very well, Morehead was just able to pull it out.

 

When we returned home on Sunday and got settled back in we went to Kroger and got a great deal!

Yummy Recipe March 2, 2009

I found a new recipe that looked easy and yummy and with the chicken I got on sale over the weekend, I had to make it! The recipe comes from raindays, a fellow member on AFC.

 

Bachelor Chicken

4 skinless, boneless chicken breasts
4 skinless drumsticks
4 skinless thighs
1/2 to 1 cup flour
3 TBSP butter
1 envelope dried onion soup mix

Preheat oven to 350 degrees

Melt butter and spread in bottom of casserole dish. Shake dried onion soup mix over butter and stir to mix. Shake chicken pieces in flour in plastic bag to coat. Place chicken in onion soup mixture and turn so that chicken has onion soup mixture on both sides. Cover with foil and bake for an hour to an hour and a half til chicken is golden brown. (Be sure to scrape up crispy bits from bottom of casserole dish — delicious!)
 

I didn’t make it exactly as it says. I didn’t need that much chicken and I didn’t have onion soup mix. I used 1 large breast and 4 thighs. It is my plan to use the breast for White Chicken Chili that I am making tonight. We ate the thighs and had leftovers for lunch!

I used some rotisserie flavoring by McCormick that I had instead of the onion mix. My chicken breast had the bone in and I had to manually take the skin off the chicken pieces. I also cooked it at 375 for an hour and half.

I made white beans (the whole dry bag so that I could use the leftovers for the soup tonight), crock pot mac and cheese, and whole kernel corn. I made a pan of cornbread to go along with it. It was a very yummy dinner!

Crock-Pot Mac and Cheese

Ingredients

  • 2 cups uncooked elbow macaroni (an 8-ounce box isn’t quite 2 cups)
  • 4 tablespoons (1/2 stuck) butter, cut into pieces
  • 2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
  • 3 eggs, beaten
  • 1/2 cup sour cream
  • 1 (10 3/4-ounce) can condensed Cheddar cheese soup
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon black pepper

Directions

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

 

White Chicken Chili

shredded chicken

chili powder

whole kernel corn

white beans

chicken broth

I mix all the ingredients together and don’t measure! So, add what you like and how much you like!

Apparently, more people enjoy MCL than what I previously thought. I have received very kind emails and comments about my blog. Thank you all so much.  Here is a little bit about what I have been up to in list format because I love lists.

 

Austin Peay Basketball

This photo was taken at the Dunn Center on the campus of Austin Peay State University. Adam and I spend a lot of time there when basketball season comes around. We first started going when the Peay went to the OVC tournment in Nashville in 2006. Despite my apprehensions, it was pretty fun. Everyone that knows me, knows I hate sports. I didn’t grow up in one of the households where sports was always talked about. An occasional Titans game and an occasional Nascar race was featured, but no more than that. Before I met my husband I had been to a few Major League baseball games and a few Titans games, but I really knew nothing about sports.

 

After dating Adam (actually before dating–our first date was the world series at a friends house!) I realized I would have to be a bit more suseptital to sports. I tried my best to get into baseball, his favorite, but just couldn’t. I hate baseball and still do. Anyways, back to basketball….I discovered that I liked going to see the Peay play and that I could do a good job of following what was going on. Pretty soon I knew all the players by full name and could recognize them by face. I started understanding the various fouls and even knew what would be called before it was called!

 

It was last year that I realized how much I loved the Peay. They won their OVC tournament after watching them all year and were going to the NCAA tourmament in Little Rock. That day they won was amazing. You wait all year long for that one game and then it finally happens and they actually win! There were also a lot of seniors that wouldn’t be playing next year that wanted it so bad and you could just feel their complete joy when that buzzer went off. I tell you, it was almost enough to bring tears to your eyes…almost.

 

This year Peay has already won both games against Murray State, their biggest rival. Winning against Murray makes me feel like we have already won the championship. The first round of the OVC Championship is Tuesday, so feel free to come out and support the Peay if you can. Peay pride. Feel it. Share it. Let’s go peay! Who ya rootin’ for? A-P-S-U!

 

Darla & Westly Dodger

Darla is on the right and Westly is on the left. They are both still with me and doing just fine. Westly got neutered at the low cost clinic. He is still feral. He is a little older than Darla and so if he does come around he won’t soon. You can see in this picture that he is sitting by Adam and looking very un-feral! This was before we let them outside to live. Westly had got used to us by seeing us everyday through the cage and I would reach in his crate and pet him every day. This evening in the pic I had brought them bough out to sit on the couch with us and they acted very good. They were afraid but loved being out of their crate. However, ever since we put them out they have been very timid. Westly runs every time I go outside.

Darla is doing better socially. She is getting to where she likes to be pet and actually jumped up in the chair I was sitting in right beside me. Moments like that make me feel like a proud mama!

 

Ice Storm

We had an ice storm! The ice lasted 2 days and 2 nights and many people around us were without power for 4 weeks or more. Luckily, we never lost power. It was very sad for all those that did and some even lost their lives due to no electricity. Many trees were down and across rodes so all public service men had to work overtime to get everything cleared. We were very fortunate to make it ok and not have lost power.

 

Goody’s in Hopkinsville closed its doors Friday and you know MCL couldn’t stay away. Everything was marked 90% off! Adam and I got 8 shirts and 1 pair of pants for $23 and we saved $250! What a deal that was!

 

Kmart had super doubles last week and I got $40 worth of stuff for about $4!

I know I told you all about how I would do the breakdowns for each store, like Kroger on Mondays and Food Lion on Wednesdays, but it is becoming too much for me! It really is a lot of work gathering all the deal info up for you all! It is enough to gather it for me, but then to put it all down in typing is tough!

The end result of this will be a change to my blog in reguards to types of posts. What I will post about is my deals I get. You can then review my deals and see how you can copy them. For specific store match ups the only way to go is AFC. Join and you will learn a lot!

From time to time I will post coupons or great deals I think you need to know about ASAP. Otherwise, you will just have to settle on looking at my deals and reading a few lessons on how to work a store.

I have been so busy! I am finally back from my long break and ready to start the new year! I did a lot of deal getting and grocery shopping so I am going to leave out a few receipts for the sake of my sanity while typing. I also went to Hobby Lobby on Saturday and they had Christmas stuff 80% off! I got a bunch of stuff totaling $16, but I saved so much money! Look what the cat, err, husband brought in… January 1, 2009

Husband calls about the time he is supposed to be home on Dec 30th and says,  ”Prepare the bathroom I have a kitten I found.”

I am thinking, oh boy this is the last thing I want to deal with right now!

He says he found like 8-10 cats living around a dumpster at a gas station that looked like 2 mama cats and their kittens. He was only able to catch one. He went to Dollar Store and bought them some food and laid it out for them. He said they all went crazy for it and that they were all very skinny and feral.

I have this little kitten who looks to be about 6 weeks old in a large dog crate with food, water, litter, and bedding. He/she was very angry! You could not pet this wild kitten the first day he was here. We call him/her Dodger.

We went back the next day, Dec 31st (our anniversary) to see if we could get any more and got a new found knowledge on the situation. After talking with a gas station employee we learned the kitties showed up a few days ago and that there were only 2 adults and 3 kittens, including the one Husband brought home.

We caught another kitten that day and after bringing him home he looks to be about 4 months old. We call him/her Wild. I have not been able to pet Wild since we got him. Dodger has become very approachable and I have pet and held him for long periods of time. I think they are both happy to be out of the gas station lot.

So, 3 remain at the gas station. We went back today, Jan 1st, and gave them some food. We had found that the gas station had already given them a abundance of scraps from their deli. I was very pleased to learn that and feel so much better about not being able to catch the rest.

Through my AFC family I have been offered very good coupons to purchase cat food. I also posted that the kitties needed help on Freecycle and I was emailed soon after about a spay/neuter low cost day close to us and they offered to fix the older kitten for free! That is such wonderful news! I am very thankful for the kind people that cross my pathway.

We did try and take the kittens we caught to the local Humane Society. They refused the kittens and said that they had no room. They told me to take them to the poud where I know they would have euthanized them on the spot due to overcrowding and the kittens being so afraid and looking feral. It saddened me that the Humane Society acted in such a way.

I hope that after posting the information I have about the kitties on freecycle that others will come foward to help them.

Kroger’s new sale ad started yesterday and it proves to be a bit better than the last.

 

Betty Crocker Frosting is still on sale for $1.50 and you can use the $0.50 off 1 manu coupon that will double.

Ronzoni Pasta is still $1.69 and using the $1 off manu coupon you can get it for $0.69.

Many deals are still the same like that.

P&G is having a deal where you buy $25 worth of P&G stuff nad get $5 instantly off your order. The items are marked throughout the store. I have yet to find a good deal doing this, but try, try, and try again!

Many things throughout the store are clearanced or on closeout because of the ending year and Christmas items. Be sure to look down each sile on all shelves for closeout prices.
